Depending on when the baby goes to bed and if the chicken has defrosted in the fridge or not (I don't feel like manually defrosting it -- my fingers freeze off): Chicken enchiladas or homemade macaroni and cheese. Mmmmm. Both good as leftovers.

mmmm mac n cheese - i love mac n cheese from scratch I'm with you on defrosting it ... I always let it thaw out on it's own overnight in the fridge.
